DESCRIPTION:

Automatic rounding portioners are machines that allow you to cut a portion of raw dough into small parts and then, thanks to an oscillating plate, round each of the pieces, so that balls with an equal weight and shape are obtained, all in a few seconds.
Hydraulic displacement machines, with 2 cylinders for the pressing phase, one cylinder for cutting and one for rounding. Control panel with the possibility of regulating the pressing, rounding and opening time of the forming chamber. Knife cleaning button. Possibility of memorizing up to 9 different programs. The machine is supplied with 3 plates.

Work cycle
1. enter the plate manually;
2. close the previous protection;
3. configure the program number - configure the working times (pressing, rounding and camera);
4. press the Start key;
5. the machine presses, cuts and rounds automatically;
6. open the previous protection;
7. remove the plate with the balls that have formed.

T1-Pressing time: it is the time used to distribute the dough inside the tank evenly, so that in the cutting phase each portion has the same weight and volume.
Result: If the outer portions have a greater weight than the inner ones, it will be necessary to reduce the time; on the other hand, if the weight is less, it is necessary to increase the time.
Tip: put the dough as much in the center of the plate as possible and flatten the portion of dough with your hands. Let the dough rest for about ten minutes before making it.
T2-Rounding time: it is the time that the oscillating plate needs to form the balls after the cutting phase.
Result: if the balls have been damaged, it is necessary to decrease the time, however if they do not form, it is necessary to increase the time, always taking into account option T3.
T3-Opening or closing time of the forming chamber: it is the time that will allow opening or closing the forming chamber, it serves to create the adequate space of the chamber that, with the rounding phase, will allow obtaining a well-formed ball.
Result: If the ball has been damaged, it is necessary to increase the time (therefore, the chamber will open more), instead if it does not form, it is necessary to decrease the time (therefore, the chamber will be closed).
